Homemade Dandelion Jelly
A friend of mine recently told me she wanted to be on my team when the Zombie Apocalypse happens because I can make things from dirt. While that isn't quite true I can make things from "Weeds" and you can too!
Dandelions are pretty much everywhere, and they are a great source of Vitamin A (111%), Vitamin C (32%), Calcium (10%), Iron (9%), Vitamin B-6 (5%) and Magnesium (5%)
So here is what you need. are you ready for this.....Dandelions!
You will need about 4 cups, have fun grab the kids and get pick'n! To give you an idea I filled up a Quart Jar and that gave me the 4 cups I needed.
So here is the list of Ingredients:
4 Cups of Dandelions
4 Cups of Water
1/4 Cup Plus 1 1/2 teaspoon of powdered pectin
4 1/2 Cups of granulated sugar
2 Tablespoons of lemon juice
Directions
1. Once you have your Dandelions picked the fun part begins! Did I tell you to grab the kiddos? You will need to pick all the petals off of the stem leaving no green just the white and yellow part of the petal.
2. Once you have your bowl filled with just the Dandelion petals, put them in a pot with 4 cups of water and bring to a boil. Reduce heat to medium and let simmer for about 3 minutes, Remove from heat and let stand for 10-30 minutes.
3. Next strain petals from liquid into another pot, I used a cheese cloth as my strainer, make sure to squeeze any excess liquid from the petals. (At this point you can discard the petals or save them to dry out for a potpourri)
4. In a separate bowl combine Pectin and 1/2 cup of sugar and set aside.
5. Now add 4 cups of sugar to your pot of Dandelion liquid and bring to a boil making sure to consistently stir to dissolve all sugar
6. Once sugar is dissolved add the Pectin and Sugar mixture to your pot and stir until dissolved.
7. Add your lemon juice to the mixture and boil for 3 minutes
8. Remove from heat and let cool for 10 minutes, and lastly place into clean mason jars and place into the refrigerator. It should take about 4 hours for to set.
This will last refrigerated for 2 weeks!
So now you can impress your friends too and make things from Weeds!
